Vegan Chickpea Cookie Dough
My son and I are obsessed with this recipe. I’ve been making it for almost a decade!
I used to make this recipe as cookies because when they come out of the oven the chocolate melts in your mouth. I actually only enjoy them warm right after baking. I then tried them as cookie dough and haven’t gone back, yet.
I personally don’t think you can mess up this up so don’t worry too much about the exact proportions and focus on how it tastes. I never measure when I make it and adjust based on what I think it needs.
What you’ll need for this recipe:
chickpeas, well rinsed
(organic if possible) peanut butter
maple syrup
sea salt
dark chocolate chips, dairy free if you prefer like me
old fashioned oats
true cinnamon also known as ceylon
vanilla without alcohol, the good stuff
Why you should eat more beans
high in fibre
promotes more SCFA which reduce inflammation
help keep you full and satiated
prevents and supports type 2 diabetes (eating fibre helps!)
colon cleansing food and helps with regular bowel movements
part of the recommended 25-38g a day

they’re inexpensive, long shelf life and easy to incorporate
a plant-based protein source, even if lower in protein than soy
Pro tip: If you have a hard time with beans and they cause you gas or bloating, you want to start really slow. Maybe 1 tbsp per day. The key is to have a small amount daily versus having large servings weekly or monthly. Your gut bacteria will adapt and get used to this new food.
Ingredients
I personally love using 2 cans or a large can because it goes fast and I just add more peanut butter
1 can chickpeas, well rinsed
1/4 - 1/3 cup organic peanut butter, only ingredients should be peanuts
2-3 tbsp of maple syrup depending on desired sweetness
a pinch of quality salt if your peanut butter doesn't have salt in it
1/4 cup of chocolate chips, I don’t measure : )
1/4 cup old fashioned oats
Recommended add ins: pinch of true cinnamon, splash of vanilla
Method
add everything except the chocolate chips to the food processor
process until combined, you may need to stop and scrape the edges down
add in chocolate chips
consistency should be pretty thick, can add splash of soy if needed
I share this with my son and it’s a great way to get more beans in. I treat it like dessert! Enjoy.
