Double Chocolate Chip Cookies - JJ Bean Dup!

My pictures don’t do this cookie justice. This vegan gluten-free cookie is the best crispy cookie I’ve ever made at home. Plus, it reminds me soo much of the double chocolate cookie from JJ Bean coffee shop. Theirs is 460 calories and 42 grams of sugar. I used to get it warmed up on the grill on my way back to my 12 hour shift, it made me happy, but it also made me become addicted! All that sugar is just not good for our bodies on a regular basis. SO that’s why I’m sharing two different recipes today. They’re both healthier by default because their made at home, but one is healthified if you will. Both are great!

Ingredients for indulgent variety

Makes 8-10

Allow a lot of space to expand on the cookie sheet!

This recipe is originally by Wife Mama Foodie, but modified

  • 1 cup oat flour, I blend old fashioned oats at home

  • 1/2 cup brown or coconut sugar

  • 1/3 cup cacao powder (you could use cocoa)

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/4 tsp sea salt or iodized sea salt

  • 1/3 cup olive oil

  • 2 tbsp soy milk, any DF works

  • 1/3 chocolate chips

For healthified version

  • use only 1/4 cup brown sugar

  • 1-2 tbsp soy milk based on consistency of dough, should be thick

  • half chocolate chips, half cacao nibs

Instructions

  1. preheat oven to 350, use parchment paper or slitmat

  2. in a large bowl combine all dry ingredients: oat flour, cacao, baking powder, baking soda, salt (I sometimes add on top instead) and mix well

  3. then add wet: olive oil, soy milk and the chocolate chips

  4. I use a cookie scoop to place them into balls on the cookie sheet only doing 6-8 per tray as they really spread out

  5. bake for 10-11 minutes, allow time to cool then transfer. they will come out very delicate, but firm up

Enjoy! I’ve doubled the batch and they still worked out great.
