Turmeric Chickpea Crepe

I love making this chickpea omelette to have with a side of sautéed vegetables, especially purple cabbage or roasted cherry tomatoes and avocado. It’s also amazing as a breakfast sandwich, recipe here. All ingredients organic if it' fits in your budget.

Some chickpea flours work great as an omelette and I’ve also had some pretty tragic fails. My go to brand after a lot of trial and error is Mother’s Nature Superfoods by Avafina, not sponsored.

I strive to eat beans daily so this is one more recipe to make that goal easy to accomplish. Beans are high in minerals, fibre, prebiotics and have a little protein. They’re great for gut health and longevity

Ingredients

  • 1/3 cup chickpea flour

  • 2/3 cup water

  • turmeric, garlic and black pepper, salt, smoked paprika to taste

Instructions

  • sift chickpea flour into a bowl if you want a smooth consistency. there may be clumps - to avoid you can sift prior or just whisk well

  • mix everything together

  • added to heated avocado oiled pan

  • flip after it starts to solidify to finish on the opposite side


I love cast iron pans to avoid toxins (endocrine disruptors) for hormone health, but I never have luck with making chickpea omelettes with mine. If yours is well seasoned, try it in a cast iron versus non stick.
