The Vegan Breakfast Sandwich

I love this breakfast sandwich so much. I often make the chickpea crepe and have it with a bunch of sautéed veggies, but sometimes you just want bread. It’s perfect during your luteal phase when you’re craving comfort food and carbs.

Ingredients

  • One chickpea flour crepe, recipe here

  • broccoli sprouts

  • leafy greens or fresh herbs such as parsley/basil or cilantro

  • avocado

  • 2 slices of bread of your choice, toasted

  • 2 slices of smoked tofu

  • hummus or mayo

  • a few drops of valentina smokey hot sauce or abokichi spicy chili miso

Combine and voila.
