The Vegan Breakfast Sandwich
I love this breakfast sandwich so much. I often make the chickpea crepe and have it with a bunch of sautéed veggies, but sometimes you just want bread. It’s perfect during your luteal phase when you’re craving comfort food and carbs.
Ingredients
One chickpea flour crepe, recipe here
broccoli sprouts
leafy greens or fresh herbs such as parsley/basil or cilantro
avocado
2 slices of bread of your choice, toasted
2 slices of smoked tofu
hummus or mayo
a few drops of valentina smokey hot sauce or abokichi spicy chili miso
Combine and voila.
