Vegan Chocolate Peanut Butter Smoothie
Who doesn’t love a creamy rich chocolate peanut butter smoothie? I don’t make them often, but when I do, it’s thoroughly enjoyed. I prefer peanut butter and chocolate to peanut butter and jam. You?
I actually used an old peanut butter jar to drink the smoothie out of to make it even more decadent. One less cup to wash is always a plus.
Peanut butter is a higher fat food with some protein as it’s a legume, not a nut.
Cacao is similar to cocoa, but it’s raw and therefore higher in antioxidants. It’s a good source of dietary magnesium, which everyone needs more of! I eat a couple squares of dark chocolate every day and anytime I can add cacao for a mineral boost into a smoothie or oatmeal, I’m in.
I include coconut water as a source of potassium, however it’s definitely optional. Great if you lean towards slower motility and constipation.
I’ve never added salt to this recipe so report back if you try it. I feel it would oh so good.
As a gut health nutritionist, I’m always trying different smoothie variations for diversity. The ultimate way to support your gut microbiome is by eating different plants each week versus always making the same exact lunch.
By adding frozen zucchini, it creamy and also adds a vegetable without changing the flavour. An easy way to get vegetables in at breakfast time if you prefer sweet over savoury.
Ingredients
tablespoon of peanut butter
tablespoon of cacao
1 banana
1-2 tbsp flax seeds and/or hemp seeds
5-6 slices of frozen zucchini (I used yellow and green)
1/2 cup coconut water
pinch of cinnamon
dairy free protein powder of choice (20 -30g of protein is ideal)
water to fill, based on how watery or thick you like your smoothie
Instructions
add everything to the blender and blend until super smooth
enjoy!
