Mexican Inspired Nourish Bowl
This is such a good meal to prep for your week. This is more of an inspirational post because mom life - I didn’t measure when we were making it, but it’s just too good not to share. I’m all about high fibre and plant protein meals to balance blood sugars, support hormonal health via bowel movements, reduce inflammation and increase energy.
Ingredients
(choose as many organic as possible)
quinoa, soak for a few hours minimum
black beans, BPA free can or dried, cooked
green onions, chopped
corn
parsley, chopped
arugula,
Dressing
olive oil
rice wine vinegar, sweetened
garlic, fresh
Dijon mustard
Stir this up and enjoy.
