Vegan Strawberry Oat Bars
These bars are pretty easy to make and so delicious. I devoured them in 2 days, no joke. Perfect with a cup of tea as a snack, a side with breakfast or a a dessert. They are filled with fibre and have a jam like consistency.

I’ve been told you can double the recipe and keep the sweetener the same and it’s still tasty.
INGREDIENTS
Base layer:
Organic if possible
2 cup old fashioned oats, GF if needed
1 cup oats ground into a flour
1 cup almond flour
half a cup banana
half a cup vegan butter (or apple sauce)
1/4 cup maple syrup
1/4 cup canned coconut milk, I used full fat
2 tsp aluminum free baking powder
Topping:
3 cups chopped up strawberries
1/3 cup maple syrup (I do not recommend agave)
3 tsp lemon juice
5 tsp chia seeds
3 tsp arrowroot (my modification as I don’t love cornstarch)
INSTRUCTIONS
Preheat oven to 360 degree F
Add all the strawberry filling ingredients to a pot for 5-10 mins, I opted for 10 minutes. Stir somewhat often so it doesn’t stick/burn
Use hands to mix all crust ingredients and press 2/3 of it into your parchment paper lined pan, optimal size is 7x11 (I used a portion of my large baking pan)
Pour the strawberry filling over the crust
Add the remaining 1/3 of the dough to the top. I choose to do it sporadically so the strawberries show
Bake for 20-25 minutes, I like the top to have a bit of a golden/browned hue. I suggest letting it cool before cutting
