High Protein Chocolate Vegan Pudding

I saw a chocolate vegan pudding at my neighbourhood grocery store and thought, I can easily recreate this. So, I did : )

I used significantly less ingredients so it may not be as decadent as the store, but I know it’s quick to make and healthier. Having a high protein treat is the perfect way to enjoy something sweet while also being mindful of our blood sugar levels. I don’t always do this, I like my sweets.

Ingredients

  • Soft organic tofu package (2 x 150 g)

  • 1/3 of of a cup of organic cacao (not cocoa)

  • Real maple syrup, to taste. I used about 1/4 cup

  • Berries optional, I choose cherries

Instructions

  1. Throw everything in a high powered blender

  2. You can add a splash of dairy free milk if you need some liquid to get it going

  3. Taste and adjust, you can always add a little cinnamon or more cacao or syrup

  4. Place in fridge and enjoy cold, option to add berries
