Spaghetti & Ground Round - Vegan Comfort Food
Back to basic, vegan style
This is not the most healthy recipe, but that is ok. Sometimes, I crave pasta and vegan meat! I usually go for homemade patties or ground round, but today we made it with Beyond Meat. In my eyes, it’s still better than beef. Enjoy this easy and tasty recipe.
Ingredients
gluten-free spaghetti to feed two people
we opted for brown rice pasta
1 tbsp of oil of choice
your faux meat of choice, we went with beyond meat
1 cup of your favourite organic low sodium tomato sauce
half a bell pepper, diced
1 carrot, chopped
2 garlic cloves, freshly chopped
1 yellow onion or shallot
basil to garnish
salt and pepper
DIRECTIONS
cook pasta according to instructions
sauté onion in oil then add garlic once translucent
add diced pepper and carrot
add your veggie meat and cook until warm
when pasta is al dente, strain then add back to pot
add vegetable mix to big pasta pot with tomato sauce of choice until heated
option to add salt, black pepper, basil and any other spices you love
So easy and yet so tasty. Vegan junk food is ok once and a while : )

High protein and filled with healthy unsaturated fats, these make great snacks for adults on the go. My child also loves them made with cacao instead of protein powder. Great to avoid feeling anxious or irritated from skipping a meal. All the benefits of ingredients are listed along with the recipe.
I literally crave this dessert and it’s made from chickpeas! The peanut butter increases the protein content and I list all the benefits of eating beans.
