Inspired Leafy Greens Butter Lettuce

If you follow along on my Instagram account, you're well aware of my love for everything GREEN! 
 

Each meal I eat has at least one green food, including breakfast! I'm not forcing myself to eat green foods, I just naturally gravitate towards them. Over the last five years I've gotten better at listening to my body, it's smart and will tell you what it needs. I feel more energized eating greens and I know i'm getting so many nutrients. One of my daily produce items is lettuce. I love the crunch, the taste and that it's alkaline. I live a busy lifestyle, as do many, and I love the convenience of fresh lettuce. I know I can have a healthy meal in under 30 minutes, even less if I've meal planned. I love roasting vegetables for the week, cooking quinoa, ensuring I have fresh vegetables in the produce drawer and of course, a ripe avocado.

THE HEALTH BENEFITS OF LEAFY GREENS

  1. high in calcium, more easily absorbed than dairy milk 
  2. potassium in greens may be anti-inflammatory 
  3. high in iron, zinc, magnesium 
  4. contains anti-oxidants to fight free radical stress
  5. dark leafy greens contain folate which is easier for the body to absorb than folic acid. 
  6. consumption of greens associated to a strong immune system
  7. aids in breast milk production 
  8. contains a phytonutrient called lutein, which supports healthy vision
  9. raise your energy level, my favourite reason. this is because chlorophyll increases ATP production in the mitochondria..
  10. high in chlorophyll, what makes plants green. very similar structure to hemoglobin. 
  11. research studies suggest leafy greens reduce cancer risk as well as help reprogram cancer cells to die.

Taco Lettuce Wraps with Creamy Cashew Dressing 

When I got my Inspired by Greens delivery I knew I wanted make taco lettuce wraps. Who doesn't love those? Since I avoid gluten, it's just easier to use lettuce versus finding a gluten-free wrap that's healthy. I wanted lots of colour so I used gorgeous purple potatoes, garnet yams, purple carrots with a yellow-y orange centre, green Batavia lettuce and taco 'meat.'

RECIPE

Ingredients for taco meat

  • 1 cup green lentils
  • 1.5 cups walnuts, toasted
  • freshly squeezed lime 
  • 2 tsp cumin powder
  • 2 tbsp extra virgin olive oil 

Top with your favourite vegetables

  • 2 diced purple potatoes
  • 1 garnet yam 
  • 1 purple carrot 
  • lettuce as a base, I used Batavia by Inspired Greens

Cashew Cream Sauce

  • 200 gram bag of raw cashews
  • 1/2 cup water
  • juice of one lemon or a tbsp. of ACV
  • dash of sea salt

Directions

  1. cook lentils until tender, but not mushy
  2. toast walnuts on cookie sheet for 12 minutes at 350 
  3. diced and steam potatoes 
  4. slice carrot 
  5. blend soaked raw cashews (can you quick soak method) with lemon juice, water and sea salt. you can even add some of the purple carrots, avocado or herbs for colour! 
  6. food process lentils and walnuts
  7. top lettuce and enjoy! 

This is my very first attempt at an avocado rose. Tip: try to find a big avocado and ensure it's not too ripe. Taco meat adapted from Oh She Glows. 

Inspired by Greens lettuce is grown in a greenhouse designed to prevent pests. It comes to you ALIVE with the roots in tact. You simply cut it when you're ready to eat it which makes it extra crunchy. With my nutrition background, I know eating fresh live foods are best as there are more nutrients and enzymes.

You can also buy Inspired Greens lettuce in a trio pack. This means you get to sample butter lettuce, batavia and romaine. Have fun experimenting with food.
