Chocolate Coconut Oatmeal Cookies, Vegan
Chocolate chip breakfast cookies are a thing, right? Well they are now!
As you can tell from my latests posts, am adding lots of healthy sweet treats. All in moderation is my belief when it comes to food. These are so easy to make and delicious.
Gluten-free, vegan and nut- free.
These are easy for people who don't want to spend lots of time in the kitchen making one recipe... me! I didn't even add baking powder. You could change up the recipe and add almond butter or pumpkin seed butter.. that would be divine.
It requires only one bowl and no food processors.
I've added sun dried (gelatinized) maca by Organika to boost energy, balance hormones, support stress symptoms and increase sex drive. Maca is a root that has been ground into a powder and is considered an adaptogen as it helps the body adapt to stress. There are many different forms of stress and it could range from working out hard, shift work, an imbalance in the body or it can have an emotional component.
Eating a fresh whole foods plant-based diet is the first step then someone can slowly add in superfoods and adaptogens. These don't replace a healthy diet, they're just add ons or a boost for the body.
Ingredients
2 ripe organic bananas, peeled
1 cup organic old fashioned oats
1/2 cup organic unsweetened coconut shreds
cinnamon, I add lots
1 tbsp maca, start with 1 tsp if you've never tried maca *
1/4 cup sunflower seeds
1/4 dairy free chocolate chips, I used Camino
mix in bowl and spoon with a 2 tbsp onto cookie sheet
bake for 10-12 minutes at 350.
* with respect to maca, please consult your health care practitioner to ensure there are no contraindications if you have any medical conditions.

High protein and filled with healthy unsaturated fats, these make great snacks for adults on the go. My child also loves them made with cacao instead of protein powder. Great to avoid feeling anxious or irritated from skipping a meal. All the benefits of ingredients are listed along with the recipe.
I literally crave this dessert and it’s made from chickpeas! The peanut butter increases the protein content and I list all the benefits of eating beans.
